Normally I would hate this weather. Snowy and cold, blecchh. However, now that I don’t have to drive to work anymore, I don’t mind so much. This morning I put flannel sheets on the bed. If you don’t have flannel sheets, get some immediately. They’re so cozy in the winter. I also put a pot of chili (it’s more like a spicy chicken soup) in the crock pot. This is my own recipe. I made it up a few weeks ago when I was trying to figure out what to make for dinner. The recipe has very little specifics; it’s pretty much made to taste. Here it is, with my notes, if you want to try it for yourself.
Boneless, skinless chicken breasts chopped into bite size pieces (I use about 1.5 to 2 lbs, whatever Kroger has packaged)
14 oz chicken broth
2 cups water
1 tsp ground cumin
1 tsp oregano
Red Hot (to taste)
2 cloves garlic finely minced
onion (Chopped however you want, use whatever amount you want. I do about 1/2 an onion coursely chopped.)
red pepper flakes (To taste. We like spicy so I use roughly 2 tbs)
salt (just a dash)
3 chicken bouillon cubes
Add the above ingredients to the crock pot. Cook on high 4-5 hours or until the chicken is done.
Before serving add,
a small package of frozen corn
1 can kidney beans
1 can white beans (by white beans I mean navy beans, pinto beans, cannellini beans–whatever you have on hand)
a squirt of lime juice (about 1 lime or use bottled lime juice, whatever)
Serve with crushed tortilla chips and cheddar cheese on top.

I just plugged my crock pot in & it’s full of Guinness Beef Stew! I love the crock pot in the winter.
